You're correct, the springs go in with the tighter coils to the top. If your weight is average I'd go with a 7w to 10w fork oil. Remember if your putting air in the forks don't go over 6PSI.

I have a Spirit 750 '02. I did my front strut seals last year and it wasn't too difficult. I followed the instructions from the manual (which I found a .pdf version here) and it took me about 3 hours. I bought the OEM seals and fork oil online, they are not hard to find.

I have a 98 Shadow 750 ACE recently purchased with 41000 KM showing. I've checked the fork springs and they fall within factory service spec for length. I have yet to pull the forks to change oil and given what I've encountered servicing the bike there is little reason to think it's ever been changed, probably not uncommon.
